Arte TV produced a 4 parts documentary about dragons in 2018.
In the 1st part John Howe & George R.R. Martin talk about dragons in general, but John Howe talks more specifically about his contribution for the Hobbit movies by Peter Jackson.
This archived version is mainly aimed for french speakers, but that's all what is still unofficially available today...

Too bad, this series was available in German, too, but as it's outdated now it has been removed from the TV station's server
